Vegetarian Enchiladas (Mexican Cuisine) by Manjula

Today I will be making vegetable enchilada. This is a popular Mexican dish with my family. Mix of veggie with homemade enchilada sauce is a tasty treat. This is my twist to classical Mexican dish which is very delicious and exotic. This recipe will serve 3. To make vegetable enchiladas, we will need: 6 corn tortillas, I am using the white corn tortillas. 1 tablespoon of oil to grill the tortillas. For enchilada sauce, we need 1 15 oz can crushed tomatoes 3 tablespoons oil 3 tablespoons of all purpose flour (maida) teaspoons of red chilli powder 1/4 teaspoon of black pepper 1 teaspoon of dried oregano 1 teaspoon of cumin seed powder 1 teaspoon of salt 1 teaspoon of sugar And 1 cup of water. For filling we need 3 cups of chopped spinach 1 teaspoon of oil 1/2 cup of corn, I am using the frozen corn. 1/2 cup of chopped mushrooms 1/3 cup of shredded cheddar cheese 1/3 cup of shredded mozzarella cheese For topping we need 1/2 cup of shredded cheddar cheese 1/2 cup of sharp cheddar cheese, shredded.

And 1 tablespoon of chopped jalapeno pepper. To make enchilada sauce, first I will puree the tomatoes. So tomato puree is ready and now I will cook the sauce. I will cook the enchilada sauce. Heat is on, medium. So first I will put the oil. All purpose flour Stir it and cook for about half a minute till the all purpose flour get very light golden brown. So this is done. And now I will put the tomato puree. Mix it well. Black pepper Cumin seed powder Oregano Red chilli powder Salt And sugar. Mix it well. And now we are going to add the water. After sauce comes to boil then we have to cook for about 2-3 minutes. It should be in pouring consistency. Sauce has come to boil. So I will just cover lightly because tomatoes will splatter. This has been about 2 minutes. So let’s check. Sauce is ready. So as you see it’s very good consistency and as it gets cold it will get more thick.

So turn off the heat. So now I will make the enchilada filling. Heat is on, medium. So first I will put the oil. Spinach Corn And mushrooms. Cook for 3-4 minutes until everything is tender. So this has been about 3 minutes. And vegetables are cooked. So now I will add the enchilada sauce about 2 tablespoons. Mix it well. And cook for one more minute. Filling is ready. So turn off the heat. And now we have to wait till filling cools off. Then I am going to mix the cheese. Mix has already cooled off.

So I will just add the cheese. Cheddar cheese And Mozzarella. Mix it well. And filling is ready. I am ready to grill the tortilla. Heat is on, medium. And I have already greased the pan. So I can do 2 at a time. And then just put little bit oil from the top. And grill about for half a minute from each side. Tortillas shouldn’t get crisp they should be still soft. And they are done. Like I said don’t overcook they will get very crisp and then you won’t be able to fold it. I am ready to assemble the enchiladas. So I will do one serving at a time in 2 enchiladas per person. So first I will take the tortillas. So first the mix. I like to make enchiladas in microwave. There are two reasons, it is quick to make and then I can personalize the enchiladas for everyone.

Someone likes more filling and someone can like less. Or more cheese or less cheese. And then someone likes hot or someone likes mild. So just roll it up. And seam side down. And now put the enchilada sauce. It should cover it. And let it run little bit. And now I am going to put some cheese. Mozzarella I am sure someone will like lot more cheese than other people. So this works really good. And I will put few pieces of jalapeno. If I was making for my daughter in law I will put lot of jalapeno. And now I am ready to microwave this for about 1-minutes. It depends on your microwave. Let’s put in microwave. And I am going to cover this. And will make it for 1 minute. Enchilada is ready, looking very nice. Cheese has melted, it’s hot and it’s bubbly. And it’s ready to serve. I like to serve vegetable enchilada with side of lettuce and tomatoes. Impress your friends with vegetable and enchiladas. This is a mouthwatering Mexican cuisine.
